Types of Pancakes

It’s usually sprinkled with powdered sugar and served with a lemon, but there are no rules keeping one from adding other things, like cinnamon, mixed berries, or whipped cream.

Potato Pancake: If you’re looking for a savory cake, this is your best bet. Still, if you like some sweetness, a great accompaniment to a potato pancake is applesauce. Like it’s sweeter varieties, potato pancakes have diverse preparations from numerous cultures around the globe.

Bing are savory delights that make the perfect lunch or snack in China. Bing is made from wheat flour and cooked on a griddle and is considered a common street food and casual snack across the country. Bing can be filled with ground meat, rolled up with duck or pork, or fried with scallions and served with hoisin sauce for dipping. The consistency of bing varies across regions, ranging anywhere from chewy and bready to light and paper-thin.

Japan’s style of pancake, okonomiyaki, is a combination of the words okonomi, meaning “what you like,” and yaki, meaning “grill.” In short, these savory pancakes are a grilled version of whatever you want them to be! Okonomiyaki’s batter is made with flour, root vegetables, shredded cabbage, and egg. Depending on where you are in Japan, other ingredients are either mixed into the batter or layered on top after cooking.

Blinis are typically eaten with sour cream, butter or caviar. Closely related to the blini is the blintz, which is a thin pancake that is rolled with fruit or cheese and then fried or baked.

1 teaspoon salt

1 tablespoon white sugar

1 1/4 cups milk

1 egg

3 tablespoons butter, melted

1 In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

2 Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Tip

Aluminum foil can be used to keep food moist, cook it evenly, and make clean-up easier.
